Prosciutto, Pear, and Blue Cheese Sandwiches

Ingredients
8 slices 100% multigrain bread
1 tablespoon butter, softened
2 cups arugula
1 medium shallot, chopped
1 tablespoon extra-virgin olive oil
2 teaspoons red wine vinegar
1/8 teaspoon freshly ground black pepper
8 ounces thinly sliced prosciutto (2
ounces per sandwich)
1 ripe pear, cored and thinly slices
2 ounces blue cheese, sliced
Instructions:
1. Preheat our broiler for the toasting
the bread.
Next, arrange bread in a single layer on
a cookie sheet and broil for about three
minutes. Turn the bread over and lightly
butter each slice. Put back under the
broiler for about 2 mins or until
toasted.
2. Take about two cups of fresh organic
arugula and add chopped shallot and put
in a medium sized bowl. Drizzle in extra
virgin olive oil and red wine vinegar.
Toss well to coat and combine all
ingredients.
Core and thinly slice organic pear. Also
thinly slice blue cheese.
Divide arugula mixture evenly over the
bottom slices. Top with proscuitto, pear
slices and blue cheese. Top with the
other multi-grain bread slice, buttered
side down.
