Cauliflower Mash Faux-Tatoes

Ingredients:
1 Head Organic Cauliflower
1 Tablespoon Fage Greek Yogurt
2 Minced Garlic Cloves
1/4 c Grated Parmesan Cheese
1/8 Teaspoon Better Than Bouillon
1 Tablespoon Earth Balance Buttery
Spread
1/8 Teaspoon Fresh Ground Black Pepper
Directions:
Set a stockpot of water to boil over
high heat.
Clean and cut organic cauliflower into
small pieces. Cook in boiling water for
approximately 6 minutes. Check
tenderness by piercing with fork to
ensure they are well done. (You can also
steam cauliflower to help lock in all of
its antioxidant benefits.) Using tongs,
remove from water and pat cooked
cauliflower very dry between several
layers of paper towels eliminating all
excess water.
In a food processor or immersion
blender, add the cauliflower, minced
garlic, parmesan, greek yogurt, chicken
base and pepper and blend until almost
smooth.
Transfer to serving bowl, garnish with 1
tablespoon of buttery spread and chopped
chives for additional color and flavor!
Benefits of Cauliflower:
Cauliflower is a member of the
cruciferous family, a family which is
known for containing nutrients that
fight against several diseases. It’s
believed that cauliflower has an
important role in fighting cancer,
including hormonal, bowel and lung
cancers. The two main ingredients in
cauliflower are indole-3-carbinol or 13C
and the photonutrient sulforaphane. They
work together as an anti-estrogen. High
estrogen levels are known to foster
tumor growth, especially in the breasts
and prostate glands. 13c helps to lower
the estrogen count, therefore, lowering
the chances of tumor growth.
Cauliflower contains vitamin c and
folate. Folate is essential for proper
tissue growth and not getting enough can
make you susceptible to several diseases
such as cancer and heart disease. The
fiber in cauliflower makes it a
heart-protective vegetable because it
helps lower blood cholesterol levels,
and the folate helps neutralize
excessive levels of heart-attack causing
homocysteine. Vitamin C acts as an
antioxidant and strengthens the immune
system; this makes cauliflower a great
choice for women before or during early
pregnancy as folate can help prevent
birth defects and the vitamin c will
help to keep the mother healthy and
strong.
When purchasing cauliflower, make sure
the tops are white. If the floret has
begun to spot brown or purple, it is
past its nutritional peak. Store in the
refrigerator and use within 1-2 days.
